Blackberry Cobbler Recipe

3 pints (6 cups) fresh blackberries, rinsed and drained, or a combination of berries and fruit
2-3 Tbsps. unsalted butter 2/3 cup sugar 1 cup all-purpose flour 1 tsp. baking powder 1/3 cup milk Vanilla ice cream or sweetened whipped cream Preheat the oven to 375 degrees. Put the butter in an 8-inch square glass baking pan and melt it in the oven, being careful not to let the butter burn. Remove from the oven and let cool. If the fruit is tart, toss it with 1 to 2 tablespoons of the sugar. Add the fruit to the baking pan and spread it out evenly to fill it no more than two-thirds full. Stir together the flour, remaining sugar, and baking powder. Pour in the milk and stir until just blended. Do not overmix. Spoon the batter over the fruit; do not mix it in. Bake for 35-40 minutes or until the crust is golden brown. Serve warm with vanilla ice cream or sweetened whipped cream. From The Berry Bible, by Janie Hibler |
